Grilled Chicken with Green Beans & Tomatoes

PREP TIME – 15 MINS. COOK TIME – 25 MINS. SERVES 4

Ingredients
4 skinless chicken breasts
200g green beans
4 tomatoes, halved
1 clove garlic, finely chopped
1 tbsp olive oil (vinaigrette)
2 tsps coconut oil (cooking)
1 tsp maple syrup
1 tbsp fresh lime juice
Salt and black pepper
Fresh coriander to serve

Method
Heat grill to medium-high. In a small bowl, combine the garlic, lime juice, maple syrup, and 1 tbsp of olive oil to make a vinaigrette. Set aside.

Rub the chicken with 1 tsp coconut oil and season with ½ teaspoon salt and ¼ teaspoon pepper. Grill until cooked through, 5 to 6 minutes per side. Meanwhile, in a large bowl, toss the green beans and tomatoes with the remaining 1 tsp coconut oil and ¼ teaspoon each salt and pepper. Grill the beans and tomatoes, turning the beans often and the tomatoes once, until tender and charred, 3 to 5 minutes.

Serve the chicken and vegetables with the vinaigrette and garnish with coriander.
